Here are the cupcakes made by Ms Rupp and i made with Ms Chipps yr 8 class in her absence!
The recipe for these healthy cupcakes is very easy!
CARROT CUPCAKES
1/2 cup oil
2 eggs beaten
3/4 cup brown sugar
1 carrot grated
1/2 cup SR Flour
1/2 cup SR Wholemeal flour
1/2 tsp mixed spice
1/2 cup sultanas or walnuts
Preheat oven 180 degrees
Combine oil, eggs, sugar. Add other ingredients. Mix lightly.
Cook for 20 min.
Cool and ice with cream cheese frosting!
Frosting:
60g cream cheese
3 tbsp icing sugar
1 tsp lemon juice
Beat ingredients together!
